CHRISTMAS EVE, DECEMBER 24

Porterhouse
On December 24, indulge in a sumptuous four-course Christmas Eve feast at Porterhouse, Sofitel The Palm’s signature steak restaurant. Start with the deliciously rich and festive foie gras complete with rhubarb jelly, caramelised figs on a bed of crispy brioche. Be wowed by turkey velouté, quail egg cooked in a delicious truffle oil – which wouldn’t be complete without the topinambours emulsion! Save room for main course, which is a succulent slow roasted turkey roulade served with smoked parsnip, potato fondant, not forgetting the cranberry jus. To finish the meal off merrily, delve into Sofitel The Palm’s meringue snow ball with mixed berry compote, kumquat in syrup, caramel cremeux and fresh cherries. Vegetarian options are also available to order. From 6.30 – 11.30pm, priced at AED 350 per person and kids may order from the a la carte.
Moana
On Christmas Eve, dive into a four-course Christmas feast with a difference at Moana. Enjoy a refreshing starter of smoked royal balik salmon, served with a side of beautiful clams, tasty sea asparagus, saffron potatoes and poached quail egg. The middle course is Atlantic sea scallops and foie gras, with a caramelised cauliflower purée accompaniment. For the main event, guests can delight in a delicate roasted turkey roulade, with chestnut mushroom stuffing, creamy spinach and an assortment of roasted root vegetables. Be sure to save room for dessert as Moana’s festive menu includes the Snow Forest, a chocolate joconde with white chocolate snow, crystallised fennel leaves, chocolate mint leaves, ginger chocolate mousse and strawberry sphere. From 6.30 – 11.30pm, priced at AED 350 per person and kids may order from the a la carte.


CHRISTMAS DAY

Manava Christmas Brunch
On December 25, celebrate the most wonderful time of the year at the Manava Christmas Brunch with festive decorations and dishes for the whole family to enjoy. Start with one of the fresh and flavoursome salads, or choose between a vast selection of cold cuts and smoked fish. Move onto the main event and enjoy a range of tender meats cooked at the live cooking stations.
No Christmas meal would be complete without an oven roasted turkey, carved fresh and served with all the traditional trimmings. Seafood enthusiasts will be thrilled by the vast choice of seafood and sushi on offer and vegetarians too will be spoilt for choice with a huge range of meat-free delights
Traditional Arabic dishes will be available alongside Western main courses providing a generous spread that will satisfy the whole family. Those with a sweet tooth will find sanctuary in the dessert station and chocolate fountain. The live trio performance will keep all ages entertained while the little ones can enjoy the kids buffet and surprise visitor from the North Pole. Guests can also enjoy access to the beach to add a little twist to their traditional day.
The brunch will take place from 12.30pm – 3.30pm and is priced at AED 485 for adults with soft drinks, AED 595 for adults with house beverages, AED 260 for young adults aged between 12-20, AED 130 for children aged between 5-11 and children below 5 years dine complimentary.

Executive Chef Olivier Chaleil

Executive Chef Olivier ChaleilWith more than 33 years of invaluable culinary experience, Executive Chef Olivier Chaleil has a wealth of expertise in the F&B and catering realm. Born as a French Canadian, Chef Olivier began his career with apprenticeships in various worldrenowned Michelin star restaurants in France, including the renowned Hôtel “L’Espérance” in St. Père-sous-Vézelay. Following an 8-year period as Restaurant Chef at the Le Meridien Hotel, Vancouver, Canada, Chef Olivier relocated to Taipei, Taiwan, from 1993 to 1997, where he was appointed Executive Chef of The Ritz Hotel, a member of the Leading Hotels of the World. In 1997, he became the Executive Chef of the globally recognised The Oberoi in Bali, Indonesia. Following this successful placement, Chef Olivier was commissioned as Executive Chef in various Leading Hotels of the World around the globe, including the esteemed One&Only Le Touessrok in Mauritius. His most recent assignment was at another iconic Leading Hotel of the World, the Ciragan Palace Kempinski in Istanbul, Turkey as Executive Chef. As Executive Chef of Sofitel The Palm, Dubai he brings his wealth of culinary knowledge to 14 restaurants & bars and also consults the LUXE Brands of Accor Hotels in the region on their culinary realm
